Marble is a metamorphic rock, formed by heat and pressure when limestone sediment crystalizes. Marble is also formed of calcium carbonate, which gives it a chemical structure that reacts easily with acids. For this reason, marble is subject to etching when exposed to organically acidic materials like lemon or tomato. Marble can also scratch so it should be protected if not seeking the well-worn look.
